Robyn "Mee Sun" Klingerman and Jairo Mauro Aleman founded A Bite with Mee with a clear mission: connect South Bend to local farms, put healthy food at the center of the community, and prove that plant-forward cooking can satisfy everyone. Starting with catering and small events, they expanded to a food truck and steadily added protein options alongside their vegan core as demand grew.

Their first full year running the truck brought in just under $190,000 in revenue, split evenly between catering and truck sales — a strong foundation they are actively looking to scale.

Before Flash Order

Calling out orders. Holding it all in their heads.

Before the truck, the team used Square for payments and a simple verbal system: the cashier would call orders to the cook. Modifications — no kimchi, no cilantro, extra sauce — lived entirely in crew members' heads, or required scrolling back through Square transactions to re-read an order.

As volume grew, the system simply couldn't keep up. When they invested in the truck, they knew they needed something purpose-built for kitchen operations.

How They Use Flash Order Today

Every channel. One kitchen display.

The team uses the Flash Order Register exclusively for cash transactions at the window. The Kiosk handles the bulk of in-person digital orders, freeing every available crew member to focus on building food rather than taking orders. The Kitchen Display System replaced the verbal relay entirely — each order flows directly to the KDS with all modifications clearly visible.

For office and corporate events — including regular visits to an Amazon data center — they distribute QR codes ahead of the visit so guests can pre-order before the truck arrives. App Clips and NFC tags extend the same capability, enabling contactless pre-ordering that gives the kitchen a head start on volume.

Fulfillment time cut in half. Crews got leaner.

Order fulfillment time dropped from five minutes or more down to roughly two and a half minutes for most items — a reduction of more than 50%. The kiosk and QR ordering have been particularly impactful at high-volume events: the team is planning to staff the Amazon data center with two people instead of three or four this year, relying on digital ordering to eliminate the need for a dedicated order-taker at the window.

Customer feedback has been strongly positive, especially among younger guests who praised the team for "upgrading to the next tech level."

What's Next

More events. Leaner crews.

A Bite with Mee is continuing to build out their full Flash Order suite, with a refreshed menu board and updated digital menus in progress. The team sees pre-ordering via App Clips and NFC as key to managing higher event volumes — getting orders before the truck arrives so the kitchen can hit the ground running. Their goal: handle more events, serve more people, and do it with a leaner crew.
